Ingredients
- 1200 g Pork fillet
- 1000 g Waxy potatoes
- 4 Stück Garlic cloves
- 20 g Ginger, fresh
- 2 Stück Red chili peppers, fresh
- 4 EL Olive oil
- 2 EL Honey
- 1 Stück Lime, juice
- 1 Bund Thyme
- 1 TL Sweet paprika powder
- Salt
- Black pepper, freshly ground
Method
- Preheat the oven to 220 °C top and bottom heat. Preheat the air fryer to 200 °C.
- Peel the garlic and ginger and finely chop them. Deseed the chili peppers (or don't, for more heat) and finely chop them. Pluck the thyme leaves from the stems.
- In a small bowl, mix 2 tbsp olive oil with honey, lime juice, garlic, ginger, chili, thyme, 1 tsp salt and some pepper to form a paste.
- Pat the pork fillet dry, rub it all over with the paste, and place it on a tray with a rack or a baking sheet lined with baking paper.
- Wash the potatoes and cut them into wedges or thick sticks. In a bowl, toss them with 2 tbsp olive oil, paprika powder, 1 tsp salt and some pepper.
- Put the potatoes into the air fryer basket and cook for about 20 minutes, shaking them twice in between.
- Slide the pork fillet into the preheated oven and roast for 18 to 22 minutes at 220 °C, until it reaches a core temperature of about 62 to 65 °C in the middle.
- Take the meat out of the oven, loosely cover it with aluminum foil and let it rest for 5 minutes. Then slice it into thick slices and serve with the potato wedges.
