Ingredients
- 800 g Beef roulade meat (top round), in 4 slices
- 3 EL Mild mustard
- 100 g Bacon, streaky, in strips
- 2 Stück Pickled gherkins
- 2 Stück Onions
- 150 g Mushrooms, sliced
- 2 Stück Carrots
- 2 EL Tomato paste
- 2 EL Cooking oil
- 2 Stück Bay leaves
- 500 ml Water
- 2 EL Cornstarch
- 1 TL Salt
- Black pepper, to taste
Method
- Pound the beef slices flat and season them with salt and pepper. Spread each slice thinly with mustard.
- Finely dice one onion and cut the other into rings. Cut the pickled gherkins lengthwise into strips and the carrots into sticks.
- Top the roulades with bacon strips, gherkin strips, onion rings, carrot sticks and mushroom slices. Roll up tightly and secure with toothpicks.
- Heat the cooking oil in the open pressure cooker and sear the roulades well on all sides. Remove them.
- Sweat the diced onions in the drippings until glassy, briefly fry the tomato paste along with them and deglaze with 500 ml water. Add the bay leaves.
- Return the roulades to the pot, close the lid and cook for 15 minutes on the highest setting. Then release the pressure slowly.
- Take the roulades out and keep them warm. Stir the cornstarch smooth with a little cold water, add it to the sauce and bring to a boil until it thickens. Season with salt and pepper.
- Remove the toothpicks and serve the roulades with the sauce.
