Ingredients
- 200 g firm tofu
- 2 EL cooking oil
- 1 EL soy sauce
- 3 EL lime juice (about 2 limes)
- 2 EL fish sauce
- 1 TL brown sugar
- 1 Stück garlic clove
- 1 Stück red chili
- 250 g English cucumber
- 250 g cherry tomatoes
- 2 Stück spring onions
- 1 Stück romaine lettuce
- 30 g unsalted peanuts
- 1 Bund fresh cilantro
- 1 Prise salt
- 1 Prise pepper
Method
- Pat the tofu dry, cut it into cubes and fry in a pan with 1 tbsp oil over medium to high heat until golden brown all over. After about 5 minutes, deglaze with 1 tbsp soy sauce and let it reduce briefly.
- For the dressing, stir together the lime juice, fish sauce, brown sugar, the finely chopped garlic clove and the chili sliced into fine rings until the sugar has dissolved.
- Halve the cucumber lengthwise, remove the seeds and slice. Halve the cherry tomatoes. Slice the spring onions into fine rings and roughly chop the cilantro.
- Wash the romaine lettuce, spin dry and tear into bite-sized pieces. Toss with the cucumber, tomatoes and spring onions in a large bowl.
- Roughly chop the peanuts and toast them briefly in a small dry pan until fragrant.
- Pour the dressing over the salad, toss gently and season with salt and pepper.
- Divide the salad between two plates, top with the tofu, sprinkle with peanuts and cilantro, and serve immediately.
