Ingredients
- 500 g fresh spätzle (refrigerated section)
- 200 ml cream
- 150 g grated cheese (Emmental or Bergkäse)
- 1 Stück onion
- 1 EL cooking oil
- salt
- pepper
Method
- Peel the onion and dice it finely.
- Heat the oil in a large pan and sweat the onion over medium heat for about 4 minutes until translucent, without letting it brown.
- Pour in the cream and let it come to a brief simmer until it thickens slightly, about 3 minutes.
- Add the grated cheese gradually and stir it in over low heat until everything is nice and creamy. The cheese clumps quickly if it gets too hot, so take your time. Season with salt and pepper.
- Bring plenty of salted water to the boil in a pot and add the spätzle straight from the refrigerated section. After 2 to 3 minutes, when they float to the top, drain them.
- Add the drained spätzle to the cheese cream and toss everything well so that each spätzle is nicely coated.
- Taste once more and serve immediately, while the cheese is still lovely and runny.
