Ingredients
- 400 g Sardines, fresh, gutted
- 150 g Bulgur, fine
- 300 ml Water
- 250 g Cherry tomatoes
- 1 Stück Bell pepper, red
- 2 Stück Garlic cloves
- 50 g Olives, black, pitted
- 1 Stück Lemon, unwaxed
- 1 Bund Parsley, flat-leaf
- 3 EL Olive oil
- 1 Prise Chili flakes
- Salt
- Black pepper
Method
- Pour 300 ml boiling water and a pinch of salt over the bulgur in a bowl, cover and let it soak for 10 minutes.
- Remove the seeds from the bell pepper and cut it into small cubes, halve the cherry tomatoes and olives, finely chop the garlic and roughly chop the parsley.
- Rinse the sardines under cold water, pat dry with kitchen paper and season inside and out with salt and pepper.
- Heat 2 tbsp olive oil in a large pan over medium heat and fry the bell pepper cubes in it for 5 minutes.
- Add the garlic, cherry tomatoes and olives to the bell pepper and fry for another 3 minutes until the tomatoes begin to soften slightly. Then remove the vegetables from the pan and keep them warm.
- Fry the sardines in the pan with a little of the remaining oil for about 2 to 3 minutes per side until crispy and the flesh is light and cooked through.
- Fluff the bulgur with a fork and mix it with the zest and juice of the lemon, the parsley, the remaining olive oil, the chili flakes and a little salt.
- Divide the bulgur between two plates, arrange the vegetables and sardines on top and serve immediately.
