Ingredients
- 300 g beef sirloin or flank steak
- salt
- pepper
- 1 EL cooking oil
- 2 Stück limes (juice)
- 2 EL fish sauce
- 1 TL palm sugar or brown sugar
- 2 Stück garlic cloves
- 2 Stück Thai chilies
- 1 Stück shallot
- 1 Stück romaine lettuce
- 0.5 Stück cucumber
- 150 g cherry tomatoes
- 2 Stück spring onions
- 1 Bund coriander
- 0.5 Bund mint
Method
- Pat the beef dry, season it with salt and pepper and let it rest at room temperature for about 20 minutes.
- Squeeze the limes. Stir the lime juice, fish sauce and palm sugar together in a small bowl until the sugar has dissolved.
- Finely chop the garlic and shallot. Slice the chilies into thin rings and add them to the dressing together with the garlic and shallot.
- Wash the romaine lettuce, dry it well in a salad spinner and tear it into rough pieces. Slice the cucumber thinly, halve the tomatoes and cut the spring onions into fine rings. Roughly chop the coriander and mint.
- Heat the cooking oil in a hot pan. Sear the beef over high heat for 2 to 3 minutes per side, until it is browned outside but still pink inside. Then let it rest for 5 minutes and slice it thinly.
- Toss the lettuce, cucumber, tomatoes and spring onions in a large bowl with a little of the dressing and divide them between two plates.
- Arrange the warm beef slices on top, drizzle with the remaining dressing and sprinkle with coriander and mint. Serve immediately.
