Ingredients

  • 250 g ground almonds
  • 200 g powdered sugar
  • 2 TL cinnamon
  • 1 Stück organic lemon, zest grated
  • 2 Stück egg white
  • 125 g powdered sugar for the icing
  • 1 Stück egg white for the icing
  • 1 TL lemon juice
  • powdered sugar for rolling out

Method

  1. Mix the ground almonds, 200 g powdered sugar, the cinnamon and the grated lemon zest in a large bowl.
  2. Add the two egg whites and knead everything into a smooth, firm dough. If it is too sticky, add a tablespoon of almond flour.
  3. Wrap the dough in cling film and let it rest in the refrigerator for about an hour.
  4. For the icing, whisk the egg white with the lemon juice until creamy, then gradually stir in the 125 g powdered sugar until you have a thick, spreadable mass.
  5. Preheat the oven to 150 °C top and bottom heat and line a baking tray with baking paper.
  6. Dust the work surface lightly with powdered sugar, roll out the dough about one centimetre thick and cut out stars.
  7. Place the stars on the baking tray, spread them with the icing and bake for about 12 to 15 minutes, until they are lightly golden brown at the edges.
  8. Let the cinnamon stars cool completely on a wire rack, then store them in an airtight container.
