Salmon Parcels with Leek, Dill and Potatoes

Ingredients

  • 300 g Salmon fillet, with skin
  • 300 g Waxy potatoes
  • 150 g Leek
  • 150 g Cherry tomatoes
  • 1 Stück Lemon
  • 1 Bund Dill
  • 20 g Butter
  • 1 EL Olive oil
  • 1 Stück Garlic clove
  • Salt
  • Pepper

Method

  1. Preheat the oven to 200 °C top and bottom heat.
  2. Wash the potatoes, halve them lengthways and parboil them in boiling salted water for about 8 minutes, then drain.
  3. Trim the leek, wash it thoroughly and cut it into thin rings. Halve the cherry tomatoes, slice the lemon and finely chop the garlic.
  4. Lay out two large sheets of aluminium foil. Place half of the leek and potatoes on each piece and drizzle with olive oil.
  5. Salt and pepper the salmon fillets and place them skin side down on the vegetables. Spread the tomatoes, garlic, lemon slices, butter pieces and half of the dill on top.
  6. Fold the foil into closed parcels so that no steam escapes, and bake on a tray in the oven for about 20 minutes, until the salmon is cooked through and the potatoes are soft.
  7. Open the parcels, sprinkle with the remaining dill and serve immediately.
