Tiramisu in a Glass

Ingredients

  • 400 ml Espresso, cooled
  • 200 g Ladyfingers
  • 4 Stück Eggs (size M)
  • 100 g Sugar
  • 500 g Mascarpone
  • 1 TL Vanilla extract
  • 300 ml Whipping cream
  • 3 EL Cocoa powder
  • 60 g Dark chocolate

Method

  1. Prepare the espresso and let it cool completely.
  2. Separate the eggs. Whisk the egg yolks with 60 g sugar and the vanilla extract in a bowl over a water bath until light and creamy and slightly thickened, then remove from the water bath and let cool.
  3. Stir the mascarpone into the cooled egg yolk mixture until a smooth cream forms.
  4. Whisk the egg whites with the remaining sugar until stiff. Whip the cream separately until stiff.
  5. Gently fold the beaten egg whites and cream into the mascarpone cream.
  6. Briefly dip the ladyfingers into the espresso without soaking them, and layer one layer each in eight glasses.
  7. Spread half of the cream over the ladyfingers, then add a second layer of dipped ladyfingers and the remaining cream on top.
  8. Chill the glasses for at least 4 hours, preferably overnight.
  9. Before serving, dust with cocoa powder and finely grate or chop the dark chocolate and sprinkle it on top.
