Ingredients
- 500 g wheat flour type 550
- 42 g fresh yeast
- 300 ml warm milk
- 2 EL honey
- 3 EL olive oil
- 1 TL salt
- 120 g dried figs
- 100 g walnut kernels
Method
- Dice the figs finely and coarsely chop the walnut kernels.
- Stir the yeast into a bowl with 100 ml of the warm milk and 1 tbsp honey and let stand for about 5 minutes, until it foams.
- Add the flour, salt, the remaining honey, the olive oil and the remaining milk to the yeast mixture and knead everything for about 8 minutes into a smooth, elastic dough.
- Cover the dough and let it rise in a warm place for about 60 minutes, until its volume has roughly doubled.
- Spread the figs and walnuts over the dough and knead for another 2 minutes, until the ingredients are evenly distributed.
- Divide the dough into 8 equal pieces, shape them into round rolls and place them on a baking sheet lined with baking paper, spaced apart.
- Cover the rolls and let them rise for another 30 minutes.
- Preheat the oven to 220 °C top and bottom heat and bake the rolls for about 18 minutes, until golden brown.
- Take the rolls out of the oven and let them cool on a wire rack.
