Ingredients
- 350 g zucchini
- 1 Stück small onion
- 1 Stück garlic clove
- 80 g feta
- 1 Stück egg
- 50 g wheat flour
- 0.5 TL baking powder
- 0.5 Bund bunch fresh mint
- 0.5 Bund bunch fresh dill
- 1 Prise pinch of pepper
- salt to taste
- 3 EL olive oil for frying
- 150 g Greek yogurt
- 0.5 Stück lemon (juice and zest)
Method
- Wash the zucchini, coarsely grate it and squeeze out as much liquid as possible in a kitchen towel or sieve.
- Finely dice the onion and press or finely chop the garlic. Crumble the feta.
- Mix the zucchini, onion, garlic, feta, egg, flour, baking powder, chopped mint and dill in a bowl. Season with pepper and a little salt until a moldable dough forms.
- Stir the yogurt with the lemon zest, some lemon juice, a pinch of salt and part of the mint, then chill.
- Heat the olive oil in a pan. Shape small flat fritters from the mixture with a tablespoon and fry them in batches over medium heat until golden brown on both sides, about 3 minutes per side.
- Drain the finished fritters briefly on kitchen paper, arrange them with the mint yogurt and a sprig of mint, and serve warm.
