Pav Bhaji is a classic street food from Mumbai: a spicy, creamy vegetable curry made from potatoes, cauliflower and peas, served with buttery toasted bread rolls. With chili and garam masala it becomes really bold.

Ingredients
- 300 g Floury potatoes
- 200 g Cauliflower
- 100 g Peas, frozen
- 300 g Tomatoes
- 1 Stück Onion
- 2 Stück Garlic cloves
- 10 g Ginger, fresh
- 1 Stück Green chili
- 1 EL Tomato paste
- 1 TL Garam masala
- 1 TL Ground cumin
- 1 TL Ground coriander
- 1 TL Kashmiri chili powder
- 0.5 TL Ground turmeric
- 40 g Butter
- 2 EL Cooking oil
- 250 ml Water
- 4 Stück Wheat burger buns
- 1 Stück Lime
- 1 Bund Fresh coriander leaves
- Salt
Method
- Peel and dice the potatoes and boil them in salted water for about 10 minutes until soft, then drain.
- Divide the cauliflower into small florets and cook them together with the peas for another 5 minutes, then drain.
- Finely chop the onion, garlic and ginger, and finely slice the green chili. Dice the tomatoes.
- Heat the cooking oil with 10 g of butter in a large pan. Sweat the onion, garlic, ginger and chili in it for 4 to 5 minutes until translucent.
- Stir in the tomato paste and toast for 1 minute. Add the diced tomatoes, garam masala, cumin, coriander, Kashmiri chili and turmeric and let it reduce for 5 to 7 minutes until a thick mass forms.
- Add the potatoes, cauliflower and peas, top up with water and roughly mash with a potato masher. Season with salt and simmer for 10 minutes until the vegetables are soft and the mixture is creamy.
- Slice the buns open and toast them in the remaining butter in a pan on both sides until golden brown.
- Season the pav bhaji with lime juice, sprinkle with chopped coriander leaves and serve with the toasted buns.
