Menemen is a Turkish egg dish made from softly scrambled eggs with tomatoes and peppers, ready in about 20 minutes in a single pan. Fresh bread goes well with it for mopping up the sauce.

Ingredients
- 4 Stück eggs
- 300 g tomatoes
- 1 Stück green bell pepper
- 1 Stück small onion
- 1 EL olive oil
- 1 TL sweet paprika powder
- 1 Prise chili flakes
- salt
- pepper
- 1 Bund parsley
- 2 Stück slices of white bread
Method
- Peel the onion and finely dice it, remove the seeds from the pepper and cut it into small cubes, rinse the tomatoes and roughly dice them.
- Heat the olive oil in a large pan over medium heat, then sweat the onion and pepper in it for about 5 minutes until soft.
- Add the diced tomatoes, paprika powder and chili flakes and simmer for another 5 minutes, until the tomatoes break down and form a thick sauce. Season with salt and pepper.
- Whisk the eggs in a bowl, pour them into the pan and let them set over low to medium heat, slowly folding them through the tomato sauce with a spatula until the egg is still slightly creamy.
- Rinse the parsley, pick off the leaves and chop them roughly, then sprinkle over the menemen.
- Toast the bread and serve it alongside.
