Ingredients
- 300 g Shrimp, raw and peeled
- 3 Stück Garlic cloves
- 3 EL Olive oil
- 1 Prise Chili flakes
- 1 Dose White beans, drained (can)
- 200 g Cherry tomatoes
- 1 Stück Lemon, organic
- 60 g Arugula
- 0.5 Bund Parsley, flat-leaf
- Salt
- Pepper, freshly ground
Method
- Rinse the shrimp under cold water, pat dry with kitchen paper and season with a little salt and pepper.
- Finely chop the garlic. Heat the olive oil in a large pan over medium heat, then sweat the garlic and chili flakes in it for about 1 minute, until fragrant but not browned.
- Add the shrimp to the pan and fry over medium to high heat for about 2 minutes per side, until pink and lightly browned. Season with salt and pepper and remove from the pan.
- Halve the cherry tomatoes and fry them in the pan for 3 minutes, until the skins burst. Rinse the white beans, drain them and add them to the tomatoes, heating together for 2 minutes.
- Return the shrimp to the pan, squeeze in the lemon and add the juice along with a little grated zest. Chop the parsley and fold it in. Divide the arugula between two plates, top with the shrimp, beans and tomatoes, and serve immediately.
