Ingredients
- 500 g wheat flour (type 405)
- 42 g fresh yeast
- 250 ml milk, lukewarm
- 70 g sugar
- 1 Stück egg
- 75 g soft butter
- 1 Prise salt
- 1 Stück organic lemon, grated zest
- 150 g ground poppy seeds
- 250 ml milk
- 60 g sugar for the filling
- 40 g butter for the filling
- 1 TL vanilla extract
- 150 g powdered sugar
- 2 EL lemon juice
- 1 EL milk for the glaze
Method
- Stir the lukewarm milk together with the crumbled yeast and 1 tsp sugar and let it stand for 5 minutes, until the mixture is slightly frothy.
- Mix the flour, remaining sugar, salt and lemon zest in a large bowl. Add the egg, yeast milk and soft butter and knead everything for 5 to 8 minutes into a smooth, elastic dough.
- Cover the dough and let it rise in a warm place for about 60 minutes, until doubled in size.
- For the filling, bring the milk, poppy seeds, sugar and butter to a boil in a pot and let it thicken for 3 to 4 minutes while stirring. Stir in the vanilla extract and let the mixture cool completely.
- Roll the dough out on a lightly floured surface into a rectangle about 30 x 40 cm. Spread the cooled poppy seed filling evenly over it, leaving a narrow border free.
- Roll the dough up loosely from the long side. Cut the roll lengthwise in half, turn the cut sides upward and braid the two strands into a plait. Press the ends down firmly and place the plait on a baking sheet lined with baking paper.
- Let the plait rise again, covered, for 30 minutes.
- Preheat the oven to 180 °C top and bottom heat. Brush the plait with a little milk and bake for 35 to 40 minutes until golden brown.
- Let the yeast plait cool on a rack for about 15 minutes.
- For the glaze, stir the powdered sugar, lemon juice and 1 tbsp milk until smooth, spread it over the still warm plait and let it set before serving.
