Ingredients
- 300 g Salmon fillet
- 100 g Glass noodles
- 250 g Broccoli
- 3 EL Soy sauce
- 1 EL Honey
- 1 Stück Lime, juice and zest
- 2 Stück Garlic cloves
- 1 TL Ginger, grated
- 2 Stück Spring onions
- 1 EL Cooking oil
- 1 TL Sesame seeds
- Salt
- Pepper
Method
- Put the glass noodles in a bowl, pour hot water over them and let them steep for 4 minutes. Drain and let them drip dry briefly.
- In a small bowl, stir together the soy sauce, honey, lime juice, half of the lime zest, ginger and the finely chopped garlic cloves.
- Break the broccoli into small florets. Slice the spring onions into thin rings, keeping the white and green parts separate.
- Cut the salmon into bite-sized pieces, season with salt and pepper. Heat the oil in a large pan and fry the salmon for 2 to 3 minutes, then remove it from the pan.
- Add the broccoli with 3 tbsp water to the pan, cover and steam for 3 minutes until it is tender-crisp. Add the white spring onion parts and fry for 1 more minute.
- Add the glass noodles and the sauce to the pan and heat for 1 to 2 minutes while stirring, until the noodles have absorbed the sauce.
- Return the salmon to the pan, gently fold it in and warm it through briefly.
- Sprinkle with sesame seeds and the green spring onion rings and serve immediately.
