Ingredients
- 5 Stück eggs
- 200 g sugar
- 1 Packung vanilla sugar
- 150 g wheat flour
- 1 TL baking powder
- 50 g butter
- 800 ml whipping cream
- 6 Stück gelatin sheets
- 500 g strawberries
- 1 Prise pinch of salt
Method
- Preheat the oven to 180 °C top and bottom heat and line a 26 cm springform pan with baking paper.
- Whisk the eggs with sugar, vanilla sugar and a pinch of salt in a mixing bowl for about 5 minutes until frothy, until the mixture is light and creamy.
- Mix the flour with baking powder, fold in in portions and gently incorporate the butter.
- Pour the batter into the pan, smooth it out and bake for about 25 minutes. Do a skewer test, then let it cool completely on a wire rack.
- Soak the gelatin sheets in cold water for about 5 minutes. Wash and hull the strawberries, slice half of them and set the rest aside for decoration.
- Whip the cream with some vanilla sugar until stiff. Gently warm a portion of the cream in a saucepan, dissolve the squeezed gelatin in it and stir it into the remaining cream.
- Cut the sponge cake horizontally once. Cover the bottom layer with the strawberry slices and spread a third of the cream over it.
- Place the second layer on top, spread the remaining cream all around the outside and chill the cake for at least 2 hours.
- Before serving, decorate with the remaining strawberries.
