- 1 pc bay leaf
- 2 pc whole cloves
- 800 g floury potatoes
- 150 ml milk
- 30 g butter
- pinch nutmeg, grated

Method
- Clean the red cabbage, remove the core and cut the cabbage into fine strips.
- Peel the onion and dice it finely. Peel the apples, quarter them, remove the cores and cut into wedges.
- Heat the cooking oil in a large pot and sweat the onion until translucent over medium heat.
- Add the red cabbage, apple wedges, bay leaf and cloves and sweat briefly.
- Deglaze with the apple cider vinegar, add the sugar and water, and season everything with part of the salt and pepper.
- Put the lid on and braise the red cabbage over low heat for about 40 minutes until tender, stirring occasionally and adding a little water if needed.
- Meanwhile, peel the potatoes, cut them into chunks and boil them in salted water for about 20 minutes until soft.
- Drain the potatoes, let them steam dry briefly and mash them finely with a potato masher.
- Warm the milk, melt the butter in the milk and gradually stir it into the potatoes until a creamy purée forms.
- Season the purée with salt, pepper and a pinch of nutmeg.
- Remove the bay leaf and cloves from the red cabbage and adjust the seasoning with vinegar and sugar again.
- Plate the red cabbage with the mashed potatoes on pre-warmed plates and serve immediately.
