Ingredients
- 150 g Rolled oats
- 100 g Spelt flour
- 1 tsp Baking powder
- 1 pinch Salt
- 3 pc Eggs
- 300 ml Milk
- 2 pc Bananas
- 1 tbsp Cooking oil
- 250 g Plain yogurt
- 150 g Blueberries
- 150 g Strawberries
- 2 tbsp Maple syrup
Method
- Grind the rolled oats finely in a blender or food processor until a flour-like powder forms.
- Mix the oat flour in a large bowl with the spelt flour, baking powder and salt.
- Whisk the eggs and milk in a second bowl and gradually stir them into the dry ingredients until a smooth, runny batter forms.
- Peel one banana, mash it with a fork and stir it into the batter. Let the batter rest for 5 minutes.
- Slice the second banana thinly. Wash, hull and cut the strawberries into pieces. Wash the blueberries and let them drain.
- Lightly grease a nonstick pan with a little cooking oil over medium heat. Pour a small ladle of batter per pancake and cook for 2 to 3 minutes, until bubbles form on the surface.
- Flip the pancake and cook for another 1 to 2 minutes until golden brown. Prepare the remaining pancakes the same way and keep them warm.
- Arrange the pancakes on plates, top with banana slices and berries, garnish with yogurt and drizzle with maple syrup.
