Ingredients
- 400 g Cauliflower
- 1 pc Egg
- 30 g Parmesan, grated
- 125 g Mozzarella
- 1 tsp Dried oregano
- Salt
- Pepper
- 1 tbsp Olive oil
- 100 g Passata
- 1 pc Red bell pepper
- 20 g Black olives, pitted
Method
- Preheat the oven to 220 °C conventional heat and line a baking tray with baking paper.
- Divide the cauliflower into florets, steam them in a pot with a little water for about 5 minutes until soft, drain, and squeeze well in a kitchen towel.
- Finely chop the cauliflower with a hand blender or a knife and mix in a bowl with the egg, 30 g Parmesan, 75 g of the mozzarella, oregano, salt, and pepper to form a pliable dough.
- Shape the dough on the baking paper into two large, round bases about 18 cm in diameter and brush them with a little olive oil.
- Bake the bases for about 15 minutes until golden brown and firm.
- Season the passata with salt and pepper and spread it over the bases.
- Remove the seeds from the pepper and cut it into thin strips. Roughly dice the remaining 50 g of mozzarella and halve the olives.
- Arrange the pepper strips and olives into faces: olives as eyes, pepper as mouth and teeth, mozzarella as nose or decoration.
- Bake the pizzas for another 5 to 8 minutes until the cheese has melted, and serve hot.
