Cinnamon Apple Chia Oat Pudding with Blueberries
A creamy chia oat pudding with grated apple and warm blueberries, tasting like a sweet breakfast and providing a pleasantly high amount of protein thanks to soy and hemp seeds. It's best to plan some time for the pudding to set.

Ingredients
- 400 ml unsweetened soy drink
- 40 g chia seeds
- 40 g rolled oats
- 1 pc apple
- 0.5 tsp cinnamon
- 1 pinch salt
- 2 tbsp maple syrup
- 200 g plain soy yogurt
- 150 g blueberries (fresh or frozen)
- 2 tbsp hemp seeds
Method
- Wash the apple, remove the core, and finely grate the apple.
- In a pot, bring the soy drink, rolled oats, cinnamon, and salt to a boil over medium heat while stirring, for about 3 minutes, until the oats are soft.
- Remove the pot from the heat, stir in the chia seeds, 1 tbsp maple syrup, and the grated apple, and let the mixture sit for about 15 minutes to thicken.
- Stir well once in between so that no lumps form.
- Warm the blueberries with 1 tbsp maple syrup in a small pot for about 3 minutes, until they are juicy, then let them cool slightly.
- Stir the soy yogurt until smooth and layer the chia oat pudding, soy yogurt, and blueberries alternately in glasses.
- Sprinkle with hemp seeds and serve immediately or chill in the fridge.
