Ingredients
- 200 g Butter, softened
- 200 g Sugar
- 1 pack Vanilla sugar
- 4 pc Eggs
- 250 g Wheat flour
- 2 tsp Baking powder
- 30 g Cocoa powder
- 100 ml Milk
- 200 g Sour cherries from a jar, drained
- 100 g Dark chocolate, roughly chopped
- 1 pinch Salt
- 2 tbsp Powdered sugar for dusting
Method
- Preheat the oven to 175 °C top and bottom heat and grease a loaf pan (approx. 25 cm) with some butter and dust it with flour.
- Beat the butter, sugar, vanilla sugar and salt in a bowl with a hand mixer for about 5 minutes until light and fluffy.
- Stir in the eggs one at a time until the mixture is smooth.
- Mix the flour, baking powder and cocoa powder and stir them into the batter in two portions, alternating with the milk, until you have an even batter.
- Gently fold the chopped dark chocolate and the drained sour cherries into the batter.
- Spoon the batter into the pan, smooth the top and bake in the preheated oven for about 55 to 65 minutes. Test with a wooden skewer to check whether the inside is fully baked.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack and let it cool completely.
- Dust with powdered sugar before serving.
