Ingredients
- 1 can Canned chickpeas (drained, approx. 240 g)
- 150 ml unsweetened soy drink
- 2 tbsp tahini
- 2 tbsp maple syrup
- 1 pc orange (juice and grated zest)
- 1 tsp cinnamon
- 1 pinch ground cloves
- 1 pinch cardamom, ground
- 2 tbsp cornstarch
- 2 tbsp water
- 30 g walnut kernels
- salt
Method
- Drain the chickpeas, rinse them under cold water and blend them very finely together with the soy drink, tahini, maple syrup, the juice of the orange, cinnamon, ground cloves, cardamom and a pinch of salt in a blender or with an immersion blender.
- Stir the cornstarch smooth with the water, stir it into the mixture and transfer everything to a saucepan.
- Heat the mixture over medium heat, stirring constantly, for about 3 minutes until it thickens noticeably, then remove from the heat.
- Coarsely chop the walnuts and toast them in a dry pan over medium heat for 2 to 3 minutes until fragrant. Then remove them from the pan so they don't burn.
- Pour the pudding into two glasses or small bowls and let it cool for at least 20 minutes so it sets.
- Before serving, sprinkle with the toasted walnuts and the grated orange zest.
