Ingredients
- 300 g beef mince
- 2 pc zucchini
- 1 pc red bell pepper
- 2 pc spring onions
- 2 pc garlic cloves
- 1 pc red chili
- 2 pc eggs
- 2 tbsp soy sauce
- 1 pc lime
- 1 bunch Thai basil
- 1 tbsp cooking oil
- salt
- pepper
Method
- Trim the spring onions and finely slice the white parts, setting the green aside. Finely chop the garlic and cut the chili into fine rings. Cut the zucchini and bell pepper into small cubes.
- Heat the cooking oil in a large pan over medium to high heat. Crumble and fry the beef mince in it for 4 to 5 minutes, until it takes on color.
- Add the zucchini, bell pepper and white spring onions and fry for 5 minutes, stirring, until the vegetables take on a little color.
- Briefly fry the garlic and chili, then deglaze with the soy sauce and the juice of half a lime. Season with salt and pepper.
- Pick the basil leaves off the stems and stir all but a handful into the pan.
- In a second non-stick pan, fry the eggs as sunny-side-up eggs over medium heat for about 3 minutes, until the egg white is set, and salt them.
- Divide the vegetable mince between two plates, place a fried egg on each, and garnish with the remaining basil, the green spring onion tops and a lime wedge.
