Thai Beef Salad with Lime and Fish Sauce (Yam Nuea)

Ingredients

  • 300 g beef sirloin or flank steak
  • salt
  • pepper
  • 1 tbsp cooking oil
  • 2 pc limes (juice)
  • 2 tbsp fish sauce
  • 1 tsp palm sugar or brown sugar
  • 2 pc garlic cloves
  • 2 pc Thai chilies
  • 1 pc shallot
  • 1 pc romaine lettuce
  • 0.5 pc cucumber
  • 150 g cherry tomatoes
  • 2 pc spring onions
  • 1 bunch coriander
  • 0.5 bunch mint

Method

  1. Pat the beef dry, season it with salt and pepper and let it rest at room temperature for about 20 minutes.
  2. Squeeze the limes. Stir the lime juice, fish sauce and palm sugar together in a small bowl until the sugar has dissolved.
  3. Finely chop the garlic and shallot. Slice the chilies into thin rings and add them to the dressing together with the garlic and shallot.
  4. Wash the romaine lettuce, dry it well in a salad spinner and tear it into rough pieces. Slice the cucumber thinly, halve the tomatoes and cut the spring onions into fine rings. Roughly chop the coriander and mint.
  5. Heat the cooking oil in a hot pan. Sear the beef over high heat for 2 to 3 minutes per side, until it is browned outside but still pink inside. Then let it rest for 5 minutes and slice it thinly.
  6. Toss the lettuce, cucumber, tomatoes and spring onions in a large bowl with a little of the dressing and divide them between two plates.
  7. Arrange the warm beef slices on top, drizzle with the remaining dressing and sprinkle with coriander and mint. Serve immediately.
