Greek Zucchini Fritters with Mint Yogurt

Ingredients

  • 350 g zucchini
  • 1 pc small onion
  • 1 pc garlic clove
  • 80 g feta
  • 1 pc egg
  • 50 g wheat flour
  • 0.5 tsp baking powder
  • 0.5 bunch bunch fresh mint
  • 0.5 bunch bunch fresh dill
  • 1 pinch pinch of pepper
  • salt to taste
  • 3 tbsp olive oil for frying
  • 150 g Greek yogurt
  • 0.5 pc lemon (juice and zest)

Method

  1. Wash the zucchini, coarsely grate it and squeeze out as much liquid as possible in a kitchen towel or sieve.
  2. Finely dice the onion and press or finely chop the garlic. Crumble the feta.
  3. Mix the zucchini, onion, garlic, feta, egg, flour, baking powder, chopped mint and dill in a bowl. Season with pepper and a little salt until a moldable dough forms.
  4. Stir the yogurt with the lemon zest, some lemon juice, a pinch of salt and part of the mint, then chill.
  5. Heat the olive oil in a pan. Shape small flat fritters from the mixture with a tablespoon and fry them in batches over medium heat until golden brown on both sides, about 3 minutes per side.
  6. Drain the finished fritters briefly on kitchen paper, arrange them with the mint yogurt and a sprig of mint, and serve warm.
